Nonetheless, I managed to maintain my composure and eat balanced & healthy for the majority of the week. Cant deny that the stress mid-week did drive me in to the world of chocolate and sugar.However, for the most part I took good care of myself. Even completed my usual 2+ miles, 45 min workout about 3 days this week! go me (comes to show that you can squezze exercise in to any schedule--if you really want to).
Today was a beautiful sunny [yet, kinda chilly] saturday. Here is what I had for lunch:
I had a salad and added what was left over of last nights DELICIOUS black bean quesadilla (went to happy hour w/ the co workers last night and had 2 small glasses of wine w/ the quesadilla---couldnt eat it all so, I saved some for today...very fulfilling!).
And my dinner:
Today I felt like keeping it all light so, I had another salad for dinner but this time added some grilled chicken. To make it all more "interesting" I added some low fat mozarella cheese which melted nicely with the chicken. After the salad, I grabbed a handful of wheat thins to complete it all. AH! and the salad was dressed with my homemade dressing...mix of 1 teaspoon olive oil, 2 teaspoons of vinegar and a touch of lemon juice. Yum!
