Only 2 weeks of school left (at least for the spring semester). I am ready to tackle these two weeks and I’m also ready for the amazing relive I will feel when is all over. Yayyy.
Before showing you guys what I have been up to in the past week, I want so share something. So, while reading one of my favorite magazines recently, I came across a quote that has really stuck to me:

"Eating healthy and exercising is a gift to my body and a gift to myself".
Somehow that made so much sense and it was the perfect burst of motivation to keep going forward with my healthy mission. We often take our bodies for granted. Lets not forget all that our precious bodies do for us; from taking us through that very last sprint while running or managing to overcome impossible hills while biking, or putting up with those days when all we feel like eating is junk. Somehow the body always bounces back, sometimes stronger than before.
And here is what I have been delighting my body with for the past week or so.
Dinner on 04/26—this is a traditional Caribbean dish called “Sancocho” very similar to a beef stew. And yes, that is a piece of delicious avocado on the side.

Dinner 04/28—a balanced meal, ½ cup rice (w/ beans on top), grilled chicken, steamed veggies.

Breakfast 04/29 (Multigrain bagel w/ low fat cream cheese & some coffee with milk):

Preparing breakfast for Friday 04/30 (the night before)—My own homemade Fruit, Yogurt, Granola Parfait:
And here is what I have been delighting my body with for the past week or so.

The end result(REALLY GOOD, and so simple to make-just mix all of the above):

And..... last but not least, this past Sunday (05/02) I was in the mood for a good home cooked meal. And thus, I prepared myself some grilled salmon with whole wheat pasta topped with organic sauce and a side of vegetables.
While preparing my dinner I was already hungry so, I made myself a small cup (1/4) of trail mix and munched on it while the pasta boiled and the salmon grilled:

It took me about 45 minutes to finish it all. I must say, this was very satisfying. Here is the end result:

...and that's all folks. This has been my past week in a nutshell. Although some meals are not pictured here, everything I consumed this past week was healthy and in moderation. Keeping the sake of my precious body in mind.
I also upgraded my exercise routine which is something im VERY EXCITED about :). But, more about that on a future post. Stay tuned!
